Whole Grain Health Muffins

Ingredients
- 1 1⁄2 cups whole wheat flour
- 3⁄4 cup ground flax seeds
- 3⁄4 cup oatmeal
- 1 cup brown sugar
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 2 teaspoons cinnamon
- 1 cup shredded carrot
- 1 cup finely chopped peeled apple
- 1⁄2 cup raisins
- 3⁄4 cup milk
- 2 eggs
- 1 teaspoon vanilla
Directions
- *groundflax seed (measure after grinding; coffee grinder is good for grinding flax seed) Preheat oven to 375.
- Lightly grease muffin tin.
- Combine all ingredients.
- Spoon batter into muffin tins about 3/4 full.
- Bake for 15-20 minutes.
- Makes 12-14 muffins depending on size.
