Whitebait Patties

That great NZ delicacy... Here is a recipe for REAL whitebait patties that are all whitebait and very little else.

• Yields: 1 batch

Ingredients

• 1⁄2 lb  whitebait
• 4  eggs
•  salt and pepper
• 1  teaspoon baking powder
• 1⁄2 cup beer
•  oil, for frying

Directions

1. Beat together all ingredients except for the whitebait.
2. Add the whitebait.
3. Drop tablespoons of the mixture into a frypan at a medium heat, adding more oil as needed.
