White-Trash Pot Roast

I don't know why, exactly, when I first receievd this recipe it was called "white-trash" and it certainly isn't an insult. It's simply a really easy way to put dinner on the table, using a crockpot. As a former chemistry student, I know that the acid in the Cola tenderizes the meat, and the caramel coloring in the soda makes your gravy brown. Delicious! Show more

Directions

  1. Cut carrots, potatoes, and onion into stew-size pieces and place in bottom of crockpot.
  2. Place roast on top. Sprinkle with black pepper (no salt--the onion soup mix contains a lot of salt).
  3. In bowl, mix soup from can, cola, and onion soup mix with a whisk, to remove lumps. Pour this liquid over roast and veggies.
  4. Cook on low in a lidded crockpot 6-8 hours or more. Don't take the lid off until you're ready to eat.You can't overcook. Serve atop wide egg noodles or rice.
