White Stallion Stuffed Mushrooms

Ingredients
- 40 large mushrooms
- 1⁄4 cup olive oil
- 3⁄4 lb spinach, chopped
- 3 tablespoons garlic
- 1 tablespoon dry onion
- 1 lb cream cheese
- 1⁄2 cup parmesan cheese
- 1⁄4 teaspoon ground nutmeg
Directions
- Over low heat saute spinach and garlic in olive oil. When limp, add onion, cream cheese, Parmesan, and nutmeg. You can refrigerate mixture overnight. Allow to come to room temperature. Just prior to serving, remove stems from mushrooms, fill with cheese mix and bake at 350 degrees for 30 minutes.
