White Queso Dip

Serves: 6-8
Yields: 4 cups
Ingredients
- 1⁄2 cup onion, chopped fine
- 3 garlic cloves, minced
- 2 teaspoons vegetable oil
- 1⁄4 cup butter
- 1⁄4 cup flour
- 2 cups milk
- 1 teaspoon cumin
- 8 ounces green chilies, chopped
- 1 jalapeno, chopped fine
- 8 ounces monterey cheese, shredded
Directions
- Saute onion and garlic in oil until onions are tender and set aside.
- Melt butter and add flour. Cook one minute, stirring constantly.
- Add milk and continue cooking for 5-10 minutes and is begining to thicken.
- Add cumin, drain and add chilies, and add jalapeno. Mix until blended.
- Season with salt and pepper.
- Remove from heat and slowly add cheese.
- Serve hot with corn chips.
