White Pork Chili

Serves: 4-6
Yields: 1 pot
Ingredients
- 1 -2 tablespoon vegetable oil
- 1 1⁄2-2 lbs boneless pork, cubed (I used pork stew meat)
- 1 teaspoon lemon pepper seasoning (Goya makes a good one. Can use more or less)
- 1 (14 ounce) can broth (chicken, beef or vegetable, your choice)
- 10 3⁄4 ounces condensed cream of celery soup
- 1⁄2-1 teaspoon celery salt (I start with 1/2 and taste)
- 1 (15 ounce) can great northern beans, drained (or other white bean of your choice)
- 1 (15 ounce) can hominy, drained (yellow or white)
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 cup sour cream (optional)
- 1 cup cheddar cheese (optional)
Directions
- in a dutch oven or other large pot, heat vegetable oil over medium high heat.
- add pork, and lemon pepper, stirring until pork is browned on all sides. Drain.
- return meat to pot, add broth, celery soup, and celery salt. bring to boil, reduce heat to low and simmer for one hour.
- add beans, hominy, onion and bell peppers to pot and simmer for one more hour, or until pork is tender.
- taste and adjust any seasonings if necessary. serve with sides of sour cream and cheese if desired, and enjoy!
