White Corn & Avocado Salsa

Serves: 4-6

Yields: 2 1/4 cups

Ingredients

  • 1  cup  frozen white corn, thawed
  • 34 cup avocado, diced
  • 14 cup cilantro, freshly chopped
  • 3  tablespoons  white onions, finely chopped
  • 2  tablespoons poblano chiles or 2  tablespoons  jalapeno peppers, seeded and finely chopped
  • 1  tablespoon fresh lime juice
  • 14 teaspoon salt

Directions

  1. Combine all ingredients.
  2. Stir together gently.
  3. Serve while cool.
