White Chocolate Rocky Road

Ingredients

  • 400  g  good quality white chocolate, chopped
  • 30  g Copha, chopped
  • 100  g  macadamia nuts
  • 3  tablespoons  desiccated coconut
  • 350  g  pink and white marshmallows, halved

Directions

  1. Lightly grease and line with foil the base and sides of a 20 x 30cm lamington/slice tin.
  2. Place the chocolate and copha in a heat proof bowl over simmering water and stir until smooth.
  3. Remove from the heat.
  4. Mix together ingredients and pour into prepared tin.
  5. Refrigerate until set.
