  1. Heat oil in 4 quart pot over medium heat. Cook onions and garlic, stirring occasionally, until onions are tender.
  2. Stir in remaining ingredients except for chicken. Bring to a boil and reduce heat.
  3. Simmer uncovered for 20 minutes.
  4. Stir in chicken and simmer until chicken is hot.
  5. Top with shredded montery jack cheese and a dollop of sour cream before serving.
