White Birch Restaurant Cucumber Salad

Serves: 6-8
Ingredients
- 2 large cucumbers
- 1 onion
- 3⁄4 cup sugar
- 1⁄3 cup vegetable oil
- 2⁄3 cup white vinegar
Directions
- Slice cucumber in thin slices. (peel if you wish).
- Cut onion in chunks.
- Mix sugar, vegetable oil & white vinegar in a separate bowl.
- Combine liquid and cucumber and onions in large bowl.
- Refrigerate overnight if possible to enhance flavors mixing.
- Optional: add grape tomatoes for added color and flavor.
