White Birch Restaurant Cucumber Salad

Great side dish for any meal! Always a great alternative to Macaroni or Potato Salad at a picnic.

  1. Slice cucumber in thin slices. (peel if you wish).
  2. Cut onion in chunks.
  3. Mix sugar, vegetable oil & white vinegar in a separate bowl.
  4. Combine liquid and cucumber and onions in large bowl.
  5. Refrigerate overnight if possible to enhance flavors mixing.
  6. Optional: add grape tomatoes for added color and flavor.
