White Bean Chicken Chili Soup

Ingredients
- 3 tablespoons olive oil
- 2 onions, chopped
- 2 garlic cloves, minced
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1⁄4 teaspoon cayenne pepper
- 2 (16 ounce) cans cannellini beans, drained and rinsed
- 6 cups chicken stock
- 3 cups diced cooked chicken
- 2 tablespoons white wine vinegar
- 1 teaspoon salt
- black pepper
- 2 cups shredded monterey jack cheese
Directions
- In large pot, heat oil. Add onions and garlic; sauté for 1 minute.
- Add cumin, oregano and cayenne; sauté until onion starts to soften, about 2 minutes.
- Add beans, stock, chicken, vinegar and salt; bring to a boil. Reduce heat and simmer 20 minutes.
- Season to taste with salt and pepper to taste. Serve topped with cheese.
