White Bean and Spinach Pizza

  1. Heat oven to 425.
  2. Heat water to boiling.
  3. In a small bowl, pour enough boiling water over dried tomatoes to cover.
  4. Let stand 10 minutes; drain.
  5. Cut into thin strips and set aside.
  6. In food processor, place beans and garlic. Cover and process until smooth.
  7. Place pizza crust on ungreased cookie sheet.
  8. Spread beans over pizza crust.
  9. Sprinkle with oregano, tomatoes, spinach and cheese.
  10. Bake 8-10 minutes or until cheese is melted.
