White Bean and Sausage Soup

Ingredients
- 1 tablespoon olive oil
- 12 ounces smoked kielbasa, cut into 1/4 inch slices
- 3 carrots, thinly sliced
- 1 celery rib, thinly sliced
- 1 (15 ounce) can white beans, drained
- 1 (15 ounce) can stewed tomatoes
- 1⁄2 cup dry white wine
- 1 1⁄2 teaspoons dried rosemary
- 1⁄2 teaspoon cayenne
- 1⁄4 teaspoon black pepper
- 1 1⁄2 cups shredded muenster cheese
Directions
- In a large saucepan, heat oil. Add sausage, carrots, and celery and cook over medium heat, until sausage is browned and vegetables are softened, 6 minutes.
- Add beans, tomatoes, wine, rosemary and 4 cups water. Bring to a boil.
- Reduce heat and simmer, uncovered, until soup is somewhat thickened and reduced, about 10 minutes.
- Season with cayenne and black pepper. Serve topped with cheese.
