White Bean and Red Pepper Spread

Yields: 2 cups
Ingredients
- 1 (16 ounce) can white beans, drained and rinsed
- 1⁄3 cup roasted red pepper
- 1 garlic clove, minced
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh parsley, chopped
- salt and pepper
Directions
- Combine everything except the parsley in a food processor and blend until smooth.
- Stir in parsley by hand. Season to taste with salt and pepper.
- Chill for at least 30 minutes before serving.
