Whipped Cream Potatoes

Ingredients
- 6 cups red potatoes, peeled and cubed
- 8 ounces sour cream
- 8 ounces cream cheese, softened
- 1⁄3 cup chopped chives
- 2 tablespoons butter
- salt and pepper
Directions
- boil potatoes.
- melt butter in a 2 quart baking dish.
- beat sour cream, cream cheese, and chives in a large mixing bowl on low speed.
- drain potatoes.
- add potatoes to the mixture and beat at a gradually increasing speed until there are no lumps.
- empty the mixture into the baking dish.
- bake at 350 for 30 minutes or until slightly golden on top.
