Whipped Cauliflower With White Cheddar Cheese

  1. Preheat oven to 350 degrees.
  2. Break cauliflower into florets and stream in vegetable steamer for about 20 minutes until soft but not mushy.
  3. Remove cauliflower from steamer.
  4. Transfer to mixing bowl and add milk, butter, salt and pepper. Add cheese and reserve 1/4 cup of cheese for topping.
  5. Mix on low until thoroughly combined but not pureed.
  6. Transfer mixture into 4 individual ramekins. Do not fill to the top as this will cause them to overflow.
  7. Add remaining cheese on the top of each dish. Cover.
  8. Bake about 15 minutes or until heated through.
