Where the Deer and the Antelope Play

A small squash stuffed with ground deer, ground antelope, rice and tomato sauce. Very similar to stuffed peppers. I used home made tomato sauce with my garden tomatoes, squash from my garden, and deer and antelope that my family hunted. Show more

  1. Set oven at 350 degrees.
  2. Cut squash in half from top to bottom. Using a spoon scoop out the seeds and stringy part. On underside of squash cut a flat part so it will sit upright. Brush olive oil onto surface of squash and on a large baking sheet. Arrange squash onto baking sheet and bake for 10 minutes.
  3. Boil 1 cup of water in a large pot and add minute rice. Turn off heat and cover, let stand 10 minutes or until water is absorbed. Fluff with a fork.
  4. Brown ground deer and ground antelope in a large skillet.
  5. Add meat, tomato sauce and salt to rice that is done. Stir until mixed well.
  6. Remove squash from oven and spoon filling into squash.
  7. Bake until filling is browned and squash is tender. 10 minutes.
