Serves: 10
Yields: 10 wraps
Ingredients
- 2 cups unbleached all-purpose flour
- 2 cups whole wheat flour
- 1 teaspoon sea salt
- 2 teaspoons baking powder
- 1⁄3 cup safflower oil
- 1 1⁄2 cups hot water
Directions
- Heat up water until boiling.
- In a large bowl, stir flour, salt and powder. Stir in safflower, until it is like coarse meal. Stir in 1 1/4 cups of boiling water. Use a spoon, mixture will be very hot. Then knead with hands until smooth. Don't over knead. Cover with plastic wrap and let sit for 15 minutes. Divide dough into 10 balls. Cover with plastic wrap again for 15 minutes.
- Heat a well seasoned cast iron skillet until hot. Roll out each ball into about a 9 to 10 inch circle. Cook wraps for about 30 seconds each side, until just before brown spots appear. Cool slightly. Or cool completely and store in zip lock type bags in fridge.
