Wheat-Pumpkin Muffins

Ingredients
- 1 1⁄2 cups whole wheat flour
- 1 teaspoon pumpkin pie spice
- 3⁄4 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 2 eggs
- 3⁄4 cup mashed cooked pumpkin (or canned pie filling)
- 1⁄2 cup firmly packed brown sugar
- 1⁄2 cup chopped walnuts
- 1⁄2 cup raisins
- 1⁄2 cup vegetable oil
- 1⁄2 cup honey
Directions
- Combine flour, pumpkin pie spice, baking powder, soda, and salt in a large mixing bowl.
- Combine remaining ingredients in a medium mixing bowl; stir well. Add to dry ingredients; stir just until dry ingredients are moistened.
- Spoon batter into paper-lined muffin cups, filling two-thirds full. Bake at 400 degrees F. for 18 to 20 minutes.
- Serve muffins hot.
