  1. Cook, peel, and slice beets.
  2. Save 1 cup of the beet juice.
  3. In a saucepan, combine sugar, cornstarch, ginger, cold beet juice, and cider.
  4. Cook over medium heat until thickened.
  5. Remove from heat.
  6. Add butter, salt, and raisins.
  7. Add beets.
  8. Heat and serve hot.
