Western Beef Rolls

Ingredients
- 2 lbs round steaks, 1/4 in thick
- 1⁄4 cup onion, chopped
- 1⁄2 cup green pepper, chopped
- 2 tablespoons oil
- 1⁄2 cup barbecue sauce, smokey
- 3⁄4 cup water
- salt, to taste
- pepper, to taste
Directions
- Pound steaks to flatten; season with salt and pepper.
- Cut each steak into 3 strips; sprinkle with onions and peppers.
- Roll up beef enclosing peppers and onions; tie closed with string.
- Heat skillet with oil to medium/medium-high heat and brown all sides.
- Add BBQ sauce and water.
- Cover and simmer 1-1 1/2 hours until tender.
- Serve over egg noodles or rice.
