Ingredients
- 4 slices bread
- 4 tablespoons unsalted butter
- 8 ounces cheddar cheese, grated
- 1⁄4 cup ale, the stronger the better
- 2 teaspoons English mustard
- salt
- pepper
Directions
- Toast the bread on both sides.
- Melt the butter in a heavy saucepan over a low heat.
- Add the cheese and ale, stirring constantly.
- Add mustard, and salt and pepper to taste.
- Spread on toast and grill or broil until browned and bubbling.
