- 2 -3 skinless chicken breasts, cut into chunks
- 2 tablespoons olive oil
- 1 1⁄2 cups instant rice
- 1 cup fat free chicken broth
- 1⁄2 cup medium hot salsa
- 1⁄2 cup sliced mushrooms
Directions
- Put 2 T. olive oil in In a Skillet and cook until chicken until white in color. Put in the rice and cover with chicken broth. Pour salsa and mushrooms into pan and simmer.
