Weeknight French Onion Soup

Ingredients
- 2 tablespoons butter
- 2 large sweet onions
- 1 cup dry red wine
- 2 (32 ounce) boxes kitchen basics beef stock
- 6 slices provolone cheese (or swiss or mozzarella)
- crouton
Directions
- Heat oven broiler.
- Melt the butter in a large saucepan. Add the onion and cover, cooking until translucent, about 10 minutes. Add the wine and cook to a boil, about 5 minutes. Add the broth and cook about 5 minutes more.
- Spoon servings into 6 oven-proof soup bowls or crocks. Top with 4-5 large croutons then the cheese slices hanging them over the edge. Put under the broiler about 3-4 minutes watching until bubbly and slightly browned. Serve immediately.
