Watermelon Mojitos

Ingredients
- 30 large fresh mint leaves, torn by hand
- 4 thick slices fresh watermelon
- 12 ounces light rum
- 1⁄2 cup simple syrup
- 6 tablespoons fresh squeezed lime juice
- 1 sprig mint (to garnish)
Directions
- Use a mortar and pestle to smash mint leaves. Remove the rind and seeds from watermelon. Put fruit in a food processor fitted with the steel blade and puree. Put the mashed mint in a large pitcher with 2 cups of the watermelon puree, the rum, simple syrup, and lime juice. Stir to combine.
- Put ice cubes in glasses, pour mojito mixture over, and garnish with mint.
