Ingredients
- 3 cups seedless watermelon, diced
- 1 cup halved cherry tomatoes
- 1⁄3 cup red onion, minced
- 1 cup cucumber, peeled, seeded and diced
- 3 tablespoons freshly squeezed lime juice, more to taste
- 2 tablespoons extra virgin olive oil
- salt and pepper
Directions
- Combine watermelon, tomatoes, onion, cucumber, lime juice and oil in a large bowl. Season with salt and pepper. Cover and refrigerate for at least 1 hour.
