Watermelon Basil Vinaigrette

I received this in an email and it sounded wonderful. I am always on the lookout for different dressings. This one comes from the Fresh From Florida Cookbook. I haven't tried it yet but plan to in the near future.

• Yields: 2 cups

Ingredients

• 4  cups  fresh watermelon, chopped and drained
• 1⁄4 cup red onion, diced small
• 2  tablespoons honey
• 1⁄4 cup champagne vinegar
• 3⁄4 cup canola oil
• 2  tablespoons fresh basil, chopped
• 1  tablespoon fresh parsley, chopped
•  salt and pepper

Directions

1. Add all ingredients to blender jar, cover and blend for until thoroughly blended.
2. Serve over your favoriate salad.
