Warm Spinach and Potato Salad

Yields: 4 Cups
Ingredients
- 1 tablespoon grainy mustard
- 1 teaspoon honey (to taste)
- 1⁄4 cup cider vinegar
- 1⁄4 cup olive oil
- 1 teaspoon sea salt (to taste)
- 2 cups small potatoes (boiled)
- 2 cups spinach
Directions
- Mix first 5 ingredients and heat gently over low heat until warm. Drizzle .
- Over potatoes and greens. Serve immediately. Also good cold the next day.
- Time to cook is time to boil the potato if not already waiting in your fridge.
