Warm Grape Tomatoes over Greens

Ingredients
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1⁄2 pint grape tomatoes
- 1⁄4 cup dry sherry
- 4 ounces Baby Spinach
- 4 ounces arugula
- 1 tablespoon olive oil
- salt and pepper
Directions
- Preheat oven to 350.
- Put 1 T olive oil and garlic in saucepan over medium heat.
- Saute 2 minutes then add grape tomatoes.
- Turn tomatoes to coat with oil.
- Add sherry, toss to coat tomatoes.
- Place pan in oven and roast for 15 minutes.
- Toss spinach and arugula with 1 T olive oil. Pour roasted tomatoes over greens and season with salt and pepper.
