Warm Chorizo and Tomato Snack

Ingredients
- 2 chorizo sausages, chopped into about 15 pieces
- 1 medium onion, diced
- 3 tablespoons extra virgin olive oil
- 3 medium ripe tomatoes, chopped to thumbnail size
- salt and pepper
- 1 bunch parsley, small bunch, roughly chopped
- 1 garlic clove, chopped
- 2 slices sourdough bread
- handful fresh basil
Directions
- Fry chorizo and onion in the oil until caramelized.
- Add Tomatos and cook till they start to break down.
- Season with salt and pepper.
- Fold in the parsley and garlic and simmer for another 2 minutes or so.
- Place the bread on the plate and spoon the chorizo and juices over it.
