Warm Cauliflower and Parsley Salad

Ingredients
- 4 cups cauliflower florets
- 2 garlic cloves, mashed
- 1⁄4 teaspoon black pepper
- 2 tablespoons drained capers, minced
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1⁄4 cup golden raisin
- 1⁄2 cup fresh parsley, roughly chopped
Directions
- Steam cauliflower. Drain and pat dry.
- In a small bowl, whisk together garlic, pepper, capers, oil and lemon juice.
- In large bowl, combine cauliflower and raisins. Add dressing and toss to coat. Let cool for 15 minutes. Add parsley and toss to combine.
