Warm Apple Sour Cream

Yields: 1 1/2 cups
Ingredients
- 2 cups chopped Granny Smith apples
- 1 tablespoon lemon juice
- 1 tablespoon apple juice
- 1 tablespoon unsalted butter
- 3⁄4 cup sour cream
- 1 teaspoon coarsely chopped of fresh mint
- 1⁄8 teaspoon salt
Directions
- In saucepan, combine apples, lemon juice, apple juice and butter and bring to a simmer over medium heat.
- Reduce heat and boil gently until apples are breaking down, about 10 minutes.
- Transfer to a food processor and process until smooth.
- Transfer to a bowl and let cool. Stir in sour cream, mint and salt until smooth.
