Warm and Cozy Gingerbread Muffins

  1. Preheat the oven to 325.
  2. Melt butter and warm honey and molasses in a saucepan over low heat.
  3. Pour into a bowl and allow to cool if too hot.
  4. Beat in egg and buttermilk.
  5. In another bowl sift all the dry ingredients, including the cloves, nutmeg, and ginger.
  6. Add the wet ingredients.
  7. Stir only until all particles are moistened.
  8. Fold in raisins.
  9. Pour into lined muffin cups 3/4 full.
  10. Bake for 25 minutes, or until tops are light brown.
