Walnut Red Pepper Dip

Yields: 2 cups

Ingredients

  • 2  cups walnuts, shelled
  • 12 teaspoon ground cumin
  • 12 teaspoon sugar
  • 12 teaspoon salt (I like sea salt)
  • 12  ounces  roasted red peppers (jarred & drained is fine)
  • 1  garlic clove, minced (I used two)
  • 2  tablespoons olive oil (use the good stuff)
  • 2  teaspoons lemon juice, fresh

Directions

  1. Put the walnuts, cumin, sugar and salt in a food processor and pulse until finely ground.
  2. Add peppers, garlic, olive oil and lemon juice.
  3. Whirl until smooth.
