Walnut Crepes With Mocha Sauce

Ingredients

  • 1 12 cups ground walnuts (about 6 ounces shelled)
  • 34 cup sugar
  • 34 cup milk
  • 14 cup raisins
  • 12 teaspoon ground cinnamon
  • 12 teaspoon  grated fresh lemon rind
  • 6  ounces  semisweet chocolate, cut into small pieces
  • 23 cup  strong coffee
  • 2  teaspoons  almond flavoring
  • 3  tablespoons butter or 3  tablespoons margarine
  • 12  dessert crepes (use Basic Whole Wheat French Crepes, adding 2 tbls. sugar to the batter or crepe recipe of your choi)
  • 1  cup heavy cream (optional)

Directions

  1. In a small saucepan, bring the walnuts, 1/2 cup of the sugar, the milk, raisins, cinnamon, and lemon rind to a simmer over moderately low heat.
  2. Cook, uncovered, for 5 minutes, stirring occasionally.
  3. Let cool completely.
  4. Meanwhile, prepare the sauce:
  5. In the top of a double boiler, warm the chocolate, the remaining 1/4 cup of sugar, and the coffee over simmering water, stirring, until the chocolate melts and the mixture is smooth.
  6. Remove from the heat and stir in the almond flavoring and butter.
  7. Set aside.
  8. Preheat the oven to 350*F.
  9. Place a crepe with the more attractive side down and spread with 1 tbls.

  11. Roll up tightly and place, seam side down, in a buttered, 13"x9"x2" baking dish.
  12. Repeat until all crepes are filled.
  13. Cover with foil.

  15. Let the sauce cool to room temperature; transfer to a tightly covered container.
  16. Refrigerate the crepes and sauce for up to 5 days or label and freeze for up to 1 month at o*F.

  18. Preheat the oven to 350*F.
  19. Bake the foil-covered crepes for 10 minutes.
  20. Uncover and bake until heated through-about 5 minutes more.
  21. At the same time, reheat the sauce in the double boiler over moderate heat until warmed through-about 5 minutes.
  22. Meanwhile, in a medium size bowl, whip the cream, if desired, until soft peaks form.
  23. Drizzle the hot crepes with some of the mocha sauce and pass the remaining sauce and whipped cream.
  24. Serves 6.
