Walnut Cookies

Soft little cookies that are really good and healthy, too! From Andrew Weil's Eating Well for Optimum Health in which he notes these cookies are high in Omega-3 fatty acids from the walnuts and have little saturated fat. I have changed the directions a bit from the original recipe. Show more

Directions

  1. Combine flours, baking powder, and salt with whisk.
  2. In another bowl, combine tofu, olive oil, brown sugar, maple syrup, and vanilla with an electric mixer until smooth.
  3. Add dry ingredients and mix until combined. Stir in walnuts.
  4. Drop by teasponfuls onto ungreased baking sheets. Bake at 350 for approximately 12-15 minutes until edges start to brown.
