Walnut Bran Muffins

Ingredients
- 1 1⁄2 cups natural bran
- 1 cup buttermilk
- 1⁄3 cup canola oil
- 1 egg (beaten)
- 2⁄3 cup brown sugar
- 1⁄2 teaspoon vanilla
- 1 cup flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1⁄2 teaspoon salt
- 1⁄2 cup walnuts (chopped)
Directions
- Heat oven 375.
- Combine the bran and buttermilk. Let stand 10 minutes.
- Combine the oil, egg, sugar and vanilla. Add to bran mix.
- Combine the flour, baking soda and powder, cinnamon and salt.
- Add to bran mix. Stir in walnuts.
- Spoon into sprayed muffin tins.
- Bake 15-20 minutes.
