Walnut and carrot toast

Ingredients
- 2 slices whole wheat bread
- 1 teaspoon margarine
To be mixed together
- 1⁄2 cup carrot, grated
- 1 tablespoon skim milk
- 2 egg whites
- 1 tablespoon fresh coriander leaves, chopped
- 1 tablespoon walnuts, chopped
- 2 spring onions, finely chopped
Directions
- Cut bread slices in halves.
- Heat a pan.
- Brush with a little oil.
- Dip bread halves into the carrot mixture.
- Cook in the non-stick pan until browned on both sides.
- Serve hot.
