Waffles

Ingredients
- 3 eggs, separated
- 2 cups sour cream
- 1 cup flour
- 1⁄8 teaspoon salt
- 1 teaspoon sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 tablespoon oil
- 1 teaspoon ground cinnamon
- 1⁄2 cup chopped pecans
- 1 teaspoon vanilla
Directions
- Mix egg yolks in bowl with sour cream.
- Sift together flour, salt, sugar, baking powder, and soda.
- Blend sifted ingredients in with eggs and cream.
- Add oil, cinnamon, nuts, and vanilla.
- Beat egg whites until stiff and fold in gently.
- Bake in waffle iron.
- Will keep in warm oven on open racks.
- Freeze in plastic bags (if you actually have any left).
