Vindaloo Chicken

Ingredients
- 2 lbs chicken, breast
- 1⁄4 teaspoon black cumin
- 1⁄4 teaspoon white cumin
- 1 teaspoon vinegar
- 1⁄2 teaspoon coriander, pods
- 1⁄2 teaspoon cardamom pod
- 1⁄4 cup garam masala
- 2 tablespoons yellow curry powder
- 6 jalapeno peppers
- 1 tablespoon cayenne pepper
- 1 tablespoon chili powder
- 1⁄4 cup sugar or 1⁄4 cup Splenda sugar substitute
- 1 teaspoon paprika
- 1 cup tomato sauce
- 2 dried chili pods
- 3 tablespoons fish sauce
- 1 cup water
- 2 tablespoons oil
Directions
- Grind coriander pods, cardamom pods, cumin, cayenne peppers, chili powder, paprika, jalapenos add the dry ingredients to a heated pan, along with garam masala and yellow curry powder, cook in oil briefly to make roux.
- Add fish sauce, chili pods, water, vinegar and simmer to reduce into a sauce.
- Slice chicken into 2" pieces, add chicken to spice mixture and add tomato sauce, splenda.
- Cook until chicken is done and serve.
