Vicki's Potato Casserole

Ingredients
- 2 lbs frozen hash browns
- 1⁄2 cup chopped onion
- 2 cups sour cream
- 1⁄2 cup butter
- 2 (8 ounce) cans cream of chicken soup or 2 (8 ounce) cans cream of celery soup
- 2 cups shredded cheddar cheese
- salt
- pepper
- Ritz cracker, crushed
Directions
- MIX ALL INGREDIENTS TOGETHER, SAVING ABOUT 1/4 CUP OF CHEESE.
- POUR INTO 9" X 13" DISH.
- TOP WITH REMAINING CHEESE AND CRUSHED RITZ CRACKERS, IF DESIRED.
- BAKE AT 350 DEGREES FOR 1 HOUR.
