Vicki's Mexicana Breakfast

I love fried eggs, tortillas, cheese and salsa. It was east to create this recipe for a different breakfast (or anytime). Show more

  1. Fry eggs to your liking. Sprinkle black pepper to taste.
  2. Lay flour tortilla on dinner plate.
  3. Place cheese on top of tortilla, covering as much of the tortilla as possible (I tear up the slices to make them fit).
  4. Heat about 35-40 seconds in microwave, enough to melt the cheese.
  5. Slide cooked eggs on top of the cheese.
  6. Spoon your favorite salsa over the eggs and spread to cover.
  7. Heat another 15 second in the microwave, unless you like the salsa cold.
  8. Eat!
