Vicki 's Rhubarb Crunch

Yields: 1 cake
Ingredients
- 1 1⁄2 cups sifted flour
- 1 1⁄4 cups oatmeal
- 1 1⁄2 cups brown sugar
- 3⁄4 cup melted butter
- 1 teaspoon cinnamon
- 4 cups rhubarb
- 1 cup sugar
- 1 teaspoon vanilla
- 2 tablespoons cornstarch
- 1 cup water
- red food coloring
Directions
- Mix flour, oatmeal, brown sugar, melted butter and cinnamon together until crumbly.
- Press 1/2 of the mixture into a greased 9x13 pan.
- Cover with rhubarb.
- Combine remaining ingredients in saucepan; cook until thick and clear.
- Pour cooked mixture over rhubarb.
- Top with remaining crumb mixture.
- Bake for 1 hour at 350 degrees Fahrenheit.
- Serve with cream.
