Directions

  1. Place chopped pecans on a baking sheet and toast at 400 degrees for 5-7 minutes.
  2. Remove 1/2 cup and chop very finely in a food processor, blender or nut chopper.
  3. Cream softened butter and sugar for 4-5/ minutes until light and fluffy.
  4. Add egg and vanilla and mix well.
  5. Roll dough into balls and place on baking sheet.
  6. Bake at 350 for 9-12 minutes. Do not overbake.
