Verne's Au Gratin Potatoes

Ingredients
- 1 (28 ounce) bag O'Brien potatoes
- 1 red pepper, chopped
- 1 green pepper, chopped
- 1 medium onion, chopped
- 4 slices OSCAR MAYER Center Cut Bacon
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon pepper
- 1 cup milk
- 1 (8 ounce) package shredded mild cheddar cheese
Directions
- Saute red pepper, green pepper, onion, and bacon in skillet until tender.
- Place potatoes into 13 x 9 greased baking pan. Add vegetables and cooked bacon once they are tender.
- In small saucepan, heat butter over low heat until melted. Add flour, salt, pepper stirring until smooth. Add 1 cup milk - heat till boiling, stirring constantly. Add shredded mild cheese and stir until melted.
- Mix cheese sauce to potatoe mixture.
- Bake 400 degrees for 1 hour until golden brown.
- Double the cheese sauce for extra creamy potatoes.
