Ingredients
- 5 lbs ground venison
- 5 lbs ground beef
- 2 1⁄2 tablespoons sugar
- 2 tablespoons ground coriander
- 2 tablespoons ground sage
- 2 teaspoons paprika
- 2 teaspoons cayenne pepper
- 4 teaspoons dried rosemary
- 2 tablespoons dry mustard
- 2 teaspoons pepper
- 2 teaspoons nutmeg
- 3 1⁄2 tablespoons salt
- hog sausage casing
Directions
- Combine seasonings in 1 cup of cold water.
- Mix seasonings into combined beef and venison mixture and let sit in the refrigerator or a cooler overnight.
- Stuff into casings and package.
- Cook as desired.
