Velvet Consomme

Ingredients
- 4 tablespoons unsalted butter
- 4 tablespoons flour
- 3 cups chicken broth
- 1 cup heavy cream
- 1⁄3 cup dry sherry
- salt and pepper
- crouton
- chives, finely snipped
Directions
- Melt butter in large saucepan over medium heat; add flour and cook for a minute or two. Pour in chicken broth and bring to a boil.
- Simmer over low heat for 8-10 minutes.
- Add the cream and bring back to a simmer.
- Add the dry sherry and season to taste with salt and pepper.
- Top with homemade croutons and chives and serve.
