Ingredients
- 1 medium onion, finely chopped, about 1 cup
- 2 stalks celery, finely chopped, about 1 cup
- 2 medium carrots, grated, about 1 cup
- 1⁄2 green bell pepper, medium-size, finely chopped, about 1/4 cup
- 1 cup dry breadcrumbs
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon black pepper
- 1⁄2 teaspoon dried dill
- 1⁄2 cup mayonnaise
- 2 eggs, slightly beaten
Directions
- Preheat the oven to 350 degrees Fahrenheit.
- Line a loaf pan with aluminum foil.
- Grease the foil.
- In a large bowl, combine the onion, celery, carrots, green pepper, bread crumbs, salt, black pepper, and dillweed.
- In a small bowl, combine the mayonnaise and eggs until smooth.
- Stir the mayonnaise into the vegetable mixture until well mixed.
- Pour the mixture into the prepared pan.
- Bake for 45 to 50 minutes.
