Ingredients

  • 1  tablespoon olive oil, for
  • 12 cup onion, chopped (i used vidalia sweet)
  • 1  tablespoon olive oil, for
  • 1  medium white potato (cubed)
  • 4  large  egg whites
  • 2  large eggs
  • 1  cup skim milk
  • 1  teaspoon  chopped fresh garlic (can be omitted, personal flavor)
  • 14 teaspoon black pepper
  • 12 cup  breadcrumbs (i use matzo meal)
  • 34 cup  shredded sharp cheddar cheese
  • 1 12 cups  vegetables, i just used all broccoli (broccoli, carrots, cauliflower will do (preferably frozen)

Directions

  1. Preheat the oven to 350°F.
  2. Saute the onion and oil in a pan until tender, then add additional oil and potatoes until slightly cooked then add garlic and remaining veggies and just heat through until defrosted.
  3. Combine egg whites, egg, milk, salt, and pepper in a large bowl. Stir in veggie mixture, bread crumbs, and all cheese but 1/4 cup, mix well.
  4. Pour entire mixture into a 9x5 glass loaf pan or something similar that will fit.
  5. Cover with remaining cheese and bake for 50 mins or until a toothpick inserted in the center comes out clean.
  6. Let it cook for 5-10 mins and cut into 1 inch slices -- .
