Veggie Couscous

Yields: 6 one cup servings

Ingredients

  •  butter  cooking spray
  • 12 cup  diced carrot
  • 12 cup  chopped onion
  • 1 (9 ounce) package  frozen cut green beans, thawed
  • 1  cup canned vegetable broth
  • 12 cup water
  • 14 teaspoon salt
  • 1  cup couscous, uncooked
  • 2  tablespoons  fat-free Italian salad dressing

Directions

  1. Coat a non-stick skillet with cooking spray; place over medium-high heat until hot.
  2. Add carrot, onion, and beans.
  3. Saute until tender.
  4. Combine broth, water and salt in a small saucepan; bring to a boil.
  5. Remove from heat.
  6. Add couscous; cover and let stand 5 minutes or until couscous is tender and liquid is absorbed.
  7. Fluff couscous with a fork.
  8. Add vegetable mixture and Italian dressing, toss lightly.
